I want to share with you how I made my daughter a Frozen Theme Cake. Of course my daughter, like the rest of the young girl population in the entire country, wanted to have a Frozen Themed birthday party. And this mama decided to make a homemade fondant cake. In case you are wondering, no I am not a baker nor am I the creative type. And while Target and Publix bakerys make some delicious cakes, I wanted to make it for her with love. One of my sisters, Joanna, who runs Exquisite Baking in New Jersey, visited us over the summer and made a cake for us. I pick up things very quickly and so I watched her carefully, took notes, lots of pictures and a video. Since she had left all the ingredients here I didn’t have to go out to buy anything new other than the other cake mix, ready made frosting in tubs, plastic bags to use with the frosting tips and the cake toppers. My sister ordered snowflake cutters from Amazon and had them shipped directly to me, along with cupcake boxes. As I got ready for the big day my sister and I exchanged emails every day for weeks before making sure I was ready. She wrote down all the steps I’d need to follow.
She reminded me to pick up a cake box and cake holder tray thingie. I was ready to start this project and it started 3 full days before the party. Yes you’ve read that right. The Thursday before the party I started with the snowflakes. I had to roll out the fondant as much as possible and I began plunging out the flakes, big ones, little ones, and laid them out on cookie trays to dry and ultimately get hard. This way when I stuck them into the frosting on the cupcakes they’d stay up straight.
The next day, Friday, I made the cake’s two layers. One layer was Hershey’s perfectly chocolate chocolate cake. You can find the recipe by clicking here. The second layer was Betty Crocker ready made mix (yes I cheated a bit). I also bought Betty Crocker ready made frosting and used tips and bags bought at Michael’s. I bought two boxes of Wilton’s Fondant. The toppers were easy because I went to the Disney store and bought the pack of figurines that already come with round plates on the bottom so easy to stand up on cake. Once the layers were made I had to make sure to even out the top so that the fondant would lay flat. My tip is to make sure you roll out the fondant as much as possible because otherwise, its too thick and harder to cut cake. I used the snowflakes on both the cupcakes and the cake. I made lil snowballs for the Olaf figurine and I made gorgeous flowers out of the frosting. The cake looked amazing. Simple, fun, homemade with love.
However, now for the downside. If you want to save money, this is NOT the route to go. Fondant is expensive. About $10 bucks a box, And all the other things you need to buy. My sister spent about $75 dollars on the ingredients she left here for us. Then there’s the frosting, the tips, the plastic bags, the box, the time, 3 days helloooo. Making a fondant cake is not easy nor is it cheap. So that’s why these types of cakes are so pricey. I’m glad I tried it but I’ll be ordering my cakes from now on.
I did a pretty good job and my daughter loved it and that was my goal. She’ll be able to tell this story to her kids and we’ll laugh and laugh over dinner somewhere around 2042 🙂
Setting up the table with cutesy ideas and name tags like Elsa’s Ice Crystals was fun. For that I used frozen jello made in ice cube trays. White powdered donuts were snowballs, simple but easily re-imagined 🙂 . For the rest of the parties dishes and frozen water bottle lables, I used free printables from Halegrafx.com:

My two favorite easy to make snacks were the blue Hawaiin punch drink and the cheese sticks with loaf’s face drawn on them, well sorta kinda olaf lol. You make it work. And it’s not a great party unless the guest of honor is happy and boy was she thrilled. Even pulling out her Elsa costume to celebrate.
